Mango, chive and prawn cases

Delicious mango and prawn bites – a must-have for your upcoming party!
Ingredients:
  • 16 slices sandwich-size bread
  • 80g butter, melted
  • 375g cream cheese, softened
  • 63.13 gm thickened cream
  • 1 large mango, flesh diced
  • 40.00 ml finely chopped chives
  • 20.00 gm mango chutney
  • 16 medium cooked prawns, peeled (tails intact), deveined
Instructions:
  • 1. Preheat oven to 160°C. 2. Remove crusts from bread slices and flatten with a rolling pin 3. Cut out 12 circles using an 11cm round cutter. 4. Brush both sides of the circles with melted butter. 5. Press into muffin pan holes. 6. Bake for 25 to 30 minutes until golden and crisp. 7. Allow to cool on a wire rack. 8. Repeat process with remaining bread slices and butter.
  • Smoothly blend cream cheese and cream together using an electric mixer. Incorporate mango, chives, chutney, salt, and pepper into the cream cheese mixture until well combined.
  • Fill each cupcake liner with the creamy cream cheese mixture, then place a succulent prawn on top of each one. Serve and enjoy!
