Penne pasta with olives, cilantro, and tangy mango sauce.
Ingredients:
  • 1 (16 ounce) package dry penne pasta
  • 1 mango - peeled, seeded and diced
  • 2 red onions, cut into strips
  • 1 small fresh red chile pepper, diced
  • 1 (14.5 ounce) can whole peeled tomatoes
  • 0.5 cup red wine
  • 1 bay leaf
  • 2 whole cloves
  • 0.5 cinnamon stick
  • salt to taste
  • 2 tablespoons honey
  • 1.5 tablespoons red wine vinegar
  • 1 cup chopped fresh cilantro
  • 1 (4 ounce) can pitted black olives
Instructions:
  • 1. Bring a generous pot of salted water to a boil. Cook penne pasta until al dente, about 9 to 13 minutes. Drain well.
  • First, warm oil in a medium saucepan over medium heat. Add mango, red onions, and chile pepper. Sauté for 5 minutes until onions are tender. Add tomatoes and wine. Incorporate the bay leaf, cloves, and cinnamon stick. Simmer for 10 minutes, stirring occasionally.
  • Strain out bay leaf, cloves, and cinnamon stick from the mango mixture. Season with salt, then stir in honey and red wine vinegar. Drizzle over cooked pasta, garnish with cilantro and olives.
