Mango & lime sorbet with lime wafers

Cool down with a refreshing summer fruit sorbet.
Ingredients:
  • 1 x 300g pkt frozen mango cheeks, chopped
  • 1 tsp finely grated lime rind
  • 21.00 gm fresh lime juice
  • 1 egg white
  • 55g (1/4 cup) caster sugar
  • 40.00 ml plain flour
  • 30g butter, melted
  • 2 tsp finely grated lime rind, extra
Instructions:
  • Preheat your oven to 180C and line four baking trays with non-stick baking paper.
  • In a food processor, blend together mango, lime rind, and lime juice until nearly smooth. Transfer the mixture into a metal container, cover with foil, and freeze for 25 minutes or until firm.
  • Using an electric beater, whip egg whites in a clean, dry bowl until soft peaks form. Gradually mix in sugar, continue whisking until dissolved. Fold in flour, butter, and additional lime zest.
  • Place four generous teaspoonfuls of the mixture onto each prepared tray and gently shape it into a 7cm-diameter disc. Bake half of the wafers in the oven, rotating the trays halfway through, for 5 minutes or until they turn a lovely golden color. Repeat the process with the remaining wafers.
  • Serve the sorbet in bowls alongside wafers.
