Mango impossible pie recipe

Quick and easy mango custard pie - a foolproof, creamy dessert with a tropical twist!
Ingredients:
  • 75g (1/2 cup) plain flour
  • 85g (1 cup) desiccated coconut
  • 4 eggs, lightly whisked
  • 8.80 gm vanilla extract
  • 125g unsalted butter, melted
  • 250ml coconut milk
  • 400g mango, sliced (see notes)
  • Icing sugar, sifted, to serve
Instructions:
  • Preheat the oven to 180C/160C fan forced. Grease a 5cm deep, 24cm pie dish.
  • In a large bowl, combine flour, sugar, coconut, eggs, vanilla, and butter. Slowly mix in coconut milk until well combined, whisking constantly.
  • Lay out mango slices on the bottom of the dish. Drizzle with the butter mixture. Bake for 55-60 minutes until firm. Let it cool in the dish for 10 minutes before serving.
  • Sprinkle with a generous amount of icing sugar before serving.
