Indulge in homemade mango pancakes for a delicious and healthy dessert alternative to Sunday yum cha.
Ingredients:
  • 500g pkt frozen diced mango, defrosted
  • 200g (1 1/3 cups) self-raising flour
  • 4.00 gm baking powder
  • 1 egg, lightly whisked
  • 250ml (1 cup) milk
  • 20g butter, melted
  • Finely grated lime rind (optional)
  • Coconut flavoured yoghurt, to serve
Instructions:
  • Blend half of the ripe mango in a food processor until it forms a smooth puree.
  • In a bowl, combine flour, sugar, and baking powder using a whisk. Create a well in the center and add the egg and milk. Whisk until nearly combined, then stir in mango puree and butter until smooth.
  • Heat a large non-stick frying pan over medium-low heat and spray with oil. Pour 80ml (1/3 cup) of the batter into the pan and cook for 1-2 minutes until bubbles appear on the surface. Flip and cook for another minute until golden. Transfer to a baking tray, cover loosely with foil, and keep warm in the oven. Repeat with the rest of the batter to make 12 pancakes.
  • Garnish the pancakes with the extra mango, a sprinkle of lime (if desired), and a dollop of yogurt.
