Crispy breaded chicken topped with flavorful mango salsa with a kick of heat from hot peppers.
Ingredients:
  • 1 fresh, ripe mango
  • 0.5 red onion, finely diced
  • 1 bunch cilantro, finely chopped
  • 0.5 green bell pepper, minced
  • 1 fresh red chile pepper, seeded and chopped
  • 4 skinless, boneless chicken breasts
  • 1 egg
  • 0.25 cup milk
  • 1 cup dried bread crumbs
  • 0.25 cup olive oil
  • 1 sprig fresh cilantro, for garnish
Instructions:
  • Combine the fresh mango, onion, cilantro, green bell pepper, and red chile pepper in a small bowl. Set aside until ready to serve.
  • Gently tenderize the chicken breasts with a mallet until flattened. Mix the egg and milk, dip the chicken in the mixture, then coat with breadcrumbs. Refrigerate for 30 minutes.
  • Cook the chicken in flavorful olive oil until it's tender, the juices run clear, and the meat is fully cooked. Drain any excess oil and pair the chicken with the vibrant mango salsa. Finish by topping with fresh cilantro leaves for a burst of color and flavor.
