Ingredients:
  • 1 cup chopped peeled mango
  • 2 teaspoons finely chopped fresh mint leaves
  • 1 teaspoon grated lime peel
  • 2 teaspoons lime juice
  • 1 teaspoon finely chopped jalapeño chile
  • 4 boneless skinless chicken breasts (1 1/4 lb)
  • 1 teaspoon ground cumin
  • 1 tablespoon canola oil
  • Fresh mint leaves, if desired
Instructions:
  • Combine ripe mango, fresh mint, zesty lime peel, tangy lime juice, and a hint of spicy chile in a small bowl. Chill until ready to serve.
  • Place each chicken breast between plastic wrap or waxed paper and pound gently until 1/2 inch thick. Combine cumin and salt in a small bowl, then rub mixture evenly over chicken.
  • Heat oil in a 10-inch nonstick skillet over medium-high heat. Cook chicken for 8 to 10 minutes, flipping once, until fully cooked in the center.
