Succulent grilled chicken topped with refreshing watermelon-mango salsa - a delicious dinner awaits you at home.
Ingredients:
  • 4 boneless skinless chicken breasts (1 1/4 Ib)
  • 2 teaspoons applewood rub grill seasoning
  • 1 tablespoon extra-virgin olive oil
  • 2 cups cubed seeded watermelon chunks
  • 1 cup cubed mango
  • 1/4 cup finely chopped red onion
  • 2 tablespoons chopped fresh cilantro
  • 1 small jalapeño chile, seeded, finely chopped
  • 1 tablespoon fresh lime juice
  • 1/2 teaspoon sugar
  • 1/4 teaspoon salt
Instructions:
  • Place the chicken in a shallow glass dish and coat it with a mixture of grill seasoning and oil. Cover and refrigerate for 1 hour.
  • In a medium bowl, combine all salsa ingredients. Cover and refrigerate to enhance flavors.
  • Preheat gas or charcoal grill and brush grill rack with oil. Grill chicken over medium heat, flipping once, until the juice runs clear when the thickest part is cut (at least 165°F). Serve with salsa.
