Delicious dessert bars featuring dried mango and sweet powdered sugar.
Ingredients:
  • 0.75 cup chopped dried mango
  • 1.333 cups all-purpose flour, divided
  • 0.25 cup confectioners' sugar, plus more for dusting
  • 0.5 cup unsalted butter
  • 1 cup packed brown sugar
  • 0.5 cup chopped mixed nuts
  • 2 large eggs, beaten
  • 0.5 teaspoon baking powder
  • 0.25 teaspoon lemon extract
  • 0.25 teaspoon salt
Instructions:
  • Preheat the oven to 350 degrees F (175 degrees C) and line a 9-inch square baking pan with parchment paper.
  • In a small saucepan, simmer the mango in water over low heat until it turns soft, approximately 15 minutes. Drain the mango and set it aside.
  • Combine 1 cup flour and 1/4 cup confectioners' sugar in a large bowl. Blend in butter until you achieve a crumbly texture. Press mixture into the baking pan to form the crust.
  • Bake until golden brown, approximately 10 minutes in the preheated oven.
  • Combine the drained mango, brown sugar, nuts, remaining 1/3 cup flour, eggs, baking powder, lemon extract, and salt in a medium bowl until thoroughly mixed. Pour the mixture over the baked crust and cover with aluminum foil.
  • Bake for 20 minutes until firm. Take out of the oven, let it cool a bit, then sprinkle with confectioners' sugar. Allow to cool completely before cutting into 12 bars.
