Ingredients:
  • 110g (1/2 cup) caster sugar
  • 40.00 gm water
  • 1 lime, rind finely grated, juiced
  • 1/4 tsp ground cardamom
  • 4 small ripe mangoes
  • 1 lime, extra, cut in wedges, to serve
Instructions:
  • In a small saucepan, mix caster sugar, water, lime rind and juice, and cardamom. Stir over medium heat until sugar dissolves. Boil for 4-5 minutes until syrupy. Transfer the syrup to a heat-resistant jug and cool in the freezer.
  • Using a sharp knife, carefully slice the mango cheeks as close to the seed as possible. Score a diamond pattern into the flesh without piercing the skin.
  • Using your thumbs, gently invert the cheeks, pushing the cubes of flesh outwards. Place the mango cheeks on serving plates, drizzle with syrup, and accompany with lime wedges.
