Spiced fruit salad with cardamom ice-cream

Exotic and simple dessert with cardamom, lemongrass, mango, and lychee flavors melding perfectly.
Ingredients:
  • 500ml vanilla ice-cream
  • 3/4 tsp ground cardamom
  • 70.95 gm caster sugar
  • 2 star anise
  • 1 tsp vanilla paste (see note) or 1 vanilla bean, halved lengthways
  • 1 stalk lemongrass, bruised
  • 1cm piece ginger, peeled, thinly sliced
  • 2 large mangoes, peeled, stones removed, cubed
  • 1/2 red papaya, peeled, seeds removed, cubed
  • 20 fresh lychees, peeled, seeds removed (see tip)
Instructions:
  • Place the ice-cream in a large bowl and let it sit for 5 minutes to soften slightly. Stir in the cardamom until fully incorporated. Transfer the ice-cream back to its container, cover, and freeze for 3 hours until firm.
  • In a small saucepan, mix sugar, 1/2 cup water, star anise, vanilla, lemongrass, and ginger. Stir over low heat until sugar dissolves, about 1 minute. Increase heat to medium and simmer for 1 more minute. Remove from heat and chill in the refrigerator until cold.
  • In a bowl, combine mango, papaya, and lychees. Pour chilled syrup over fruit and gently stir to combine. Cover and refrigerate for a minimum of 2 hours to enhance flavors.
  • Ladle fruit and syrup into bowls and pair with fragrant cardamom ice-cream.
