Festive fruit dish perfect for Christmas morning.
Ingredients:
  • 4 ripe mangoes, peeled, cut into 3cm-thick slices
  • 125.00 ml passionfruit pulp (see note)
  • 500.00 ml Greek Style Yoghurt
  • 161.25 gm caster sugar
  • 125.00 ml flaked almonds, toasted
Instructions:
  • In a bowl, mix together mango and passionfruit. Divide the mixture among eight 1-cup capacity cocktail or serving glasses. Add a dollop of yogurt on top. Chill in the refrigerator for 1 hour or until ready to enjoy.
  • Prepare almond praline by lining a baking tray with parchment paper. Combine sugar and 2 1/2 tablespoons of cold water in a saucepan and dissolve the sugar over low heat. Increase the heat to medium and cook without stirring for 8 to 10 minutes until it turns a deep golden color. Remove from heat, mix in the almonds, and pour the toffee mixture onto the tray in a thin stream. Let it set at room temperature.
  • Crush praline into small chunks and sprinkle over yogurt before serving.
