Satisfy your sweet cravings with these delightful bite-sized treats!
Ingredients:
  • 1 cup Gold Medal™ all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 cup unsalted butter, softened
  • 1/3 cup granulated sugar
  • 2 eggs
  • 1/3 cup milk
  • 1 teaspoon grated lime peel
  • 1/2 cup finely chopped mango (1/2 medium)
  • 2 cups powdered sugar
  • 1/2 teaspoon grated lime peel
  • 2 tablespoons fresh lime juice
Instructions:
  • Preheat oven to 350°F. Line 24 mini muffin cups with paper liners and lightly coat them with cooking spray. In a small bowl, combine flour, baking powder, and salt; set aside.
  • In a medium bowl, cream together 1/4 cup of butter and granulated sugar using an electric mixer for 1 minute. Add eggs one at a time, mixing on low speed after each addition. Gradually mix in the flour mixture in thirds and the 1/3 cup of milk in halves until just combined. Mix in 1 teaspoon of lime peel and gently fold in the mango.
  • Divide the batter evenly among the muffin cups, filling them two-thirds full.
  • Bake for 12 minutes or until a toothpick inserted in the center comes out clean. Let cool for 10 minutes, then remove the cupcakes from the pans and place them on cooling racks. Allow them to cool completely for about 15 minutes.
  • In a medium bowl, use an electric mixer to whip up the frosting ingredients until smooth. Transfer the frosting to a decorating bag with a star tip and beautifully pipe it onto each cupcake.
