Mango-Lime Curd

Whip up this tropical mango-lime curd to elevate any dessert or enjoy it on its own for a burst of flavor.
Ingredients:
  • 2 cups mango chunks
  • 3 tablespoons lime juice
  • 1 tablespoon lime zest
  • 2 large eggs
  • 0.125 teaspoon salt
  • 0.125 teaspoon ground nutmeg
  • 0.25 cup butter, melted
  • 0.5 cup white sugar
Instructions:
  • In the bowl of a food processor, blend together mango, lime juice, and lime zest until smooth. Then, add eggs, salt, and nutmeg and pulse for an additional 15 seconds.
  • In a bowl, mix sugar and butter. Then add the sugar-butter mixture to the mango blend in the food processor. Blend until smooth.
  • Transfer the mixture to a microwave-safe bowl. Microwave at 50% power for 2 minutes, then stir with a whisk. Microwave for another 2 minutes and whisk again. Repeat this process until the mixture thickens like pudding, about 6 to 10 minutes total. Cover and refrigerate until cold, approximately 30 minutes.
