Mantastic Fried Chicken and Waffle Sandwich

Elevated chicken and waffles with beer-infused batter, crispy bacon, and a hint of bourbon for a hearty, indulgent twist. Perfect for the adventurous foodie.
Ingredients:
  • 12 slices bacon
  • 1 tablespoon butter
  • 4 slices onion (from 1 medium onion)
  • 4 boneless skinless chicken breasts (4 oz each)
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground black pepper
  • 3/4 cup Original Bisquick™ mix
  • 1/2 teaspoon chipotle chile powder
  • 1/4 cup vegetable oil
  • 3/4 cup pure maple syrup
  • 2 tablespoons butter
  • 1 tablespoon bourbon whiskey
  • 1 1/2 cups regular or nonalcoholic beer (12 oz)
  • 2 tablespoons vegetable oil
Instructions:
  • In a large skillet, cook the bacon on low heat for 8 to 10 minutes until crisp, turning occasionally. Drain on paper towels and set aside.
  • In a small skillet, melt a generous tablespoon of butter over medium heat. Sauté the onion for about 10 minutes, stirring often, until it turns a beautiful golden brown. Remove from heat and set aside.
  • Place the chicken breast between waxed paper or plastic wrap and gently pound it using a meat mallet or rolling pin until it's about 1/2 inch thick. Season the chicken with salt and pepper.
  • First, combine 3/4 cup of Bisquick mix and 1/2 teaspoon of chipotle powder in a shallow bowl. In a separate bowl, whisk an egg with the remaining 1/2 teaspoon of chipotle powder. Dip the chicken into the seasoned egg mixture, ensuring it is coated well before dredging it in the Bisquick mixture.
  • Heat 1/4 cup oil in a 12-inch nonstick skillet over medium heat. Cook chicken for 8 to 10 minutes, flipping once, until golden brown and no longer pink in the center. In a 1-quart saucepan, bring maple syrup and 2 tablespoons butter to a boil. Remove from heat and stir in bourbon before setting aside.
  • Combine waffle ingredients in a medium bowl until well mixed. Pour a generous amount of batter onto the hot waffle iron. Cook for about 5 minutes or until steaming subsides. Gently take out the waffle and continue with the rest of the batter to make 8 delicious waffle sections.
  • Assemble the dish by placing a waffle section on a plate. Top it with 3 slices of bacon, 1 piece of chicken, onion slices, and another waffle section. Cut the sandwich in half and serve with syrup for dipping.
