Garlicky marinated mochiko chicken with rice flour, soy sauce, scallions, and cayenne, deep-fried for fantastic flavor.
Ingredients:
  • 5 large eggs
  • 1 cup white rice flour
  • 1 cup soy sauce
  • 1 cup chopped green onions
  • 0.33333334326744 cup cornstarch
  • 6 cloves garlic, minced
  • 1.5 tablespoons salt
  • 1 teaspoon cayenne pepper
  • 5 pounds boneless skinless chicken breasts, cut into strips
  • 4 cups oil for frying, or as needed
Instructions:
  • Combine eggs, rice flour, soy sauce, green onions, sugar, cornstarch, garlic, salt, and cayenne pepper in a large bowl until mixture is well blended. Add chicken and mix until fully coated. Refrigerate and let marinate for 24 hours.
  • Heat oil in a deep fryer or large saucepan until it reaches 350 degrees F (175 degrees C).
  • Fry battered chicken in hot oil until beautifully golden and crispy on all sides. Check with an instant-read thermometer; it should reach 165°F (74°C). Drain the fried chicken on a paper towel-lined plate.
