Mochiko Chicken Wings

Chicken marinated in Asian flavors overnight, fried to crispy perfection.
Ingredients:
  • 3 eggs, beaten
  • 0.5 cup soy sauce
  • 2 tablespoons white sugar
  • 2 teaspoons Hawaiian sea salt
  • 6 green onions, finely chopped
  • 5 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 0.75 cup cornstarch
  • 0.75 cup mochiko (glutinous rice flour)
  • 5 pounds chicken wings or thighs
  • Oil for deep frying
Instructions:
  • Combine eggs, soy sauce, sugar, sea salt, green onions, and garlic in a large bowl. Mix in flour, cornstarch, and mochiko until smooth. Add chicken and coat well. Cover and refrigerate overnight.
  • Take the chicken out of the fridge and give it a quick mix. Heat up a large pot of oil to 350°F (175°C), and deep fry the chicken wings until they are golden brown and fully cooked. Drain them on paper towels.
