Maple Leaf Cream Wafers

Celebrate the season with decadent double-maple cookies filled with creamy goodness.
Ingredients:
  • 1 cup butter, softened
  • 1/3 cup whipping cream
  • 1/2 teaspoon maple extract
  • 2 cups Gold Medal™ all-purpose flour
  • 2 tablespoons sugar
  • 1/4 cup butter, softened
  • 1 cup powdered sugar
  • 3 to 4 teaspoons milk
Instructions:
  • Combine 1 cup butter, whipping cream, and 1/2 teaspoon maple extract in a large bowl and blend well. Mix in flour until fully combined. Divide the dough in half and shape each portion into a flattened disk. Wrap each disk in plastic wrap and refrigerate for 1 hour for easier handling.
  • Preheat your oven to 375°F. Roll out half of the dough on a lightly floured surface until it's 1/8-inch thick. Keep the remaining dough in the refrigerator. Use a 2-inch maple-leaf cookie cutter to cut out the shapes. Arrange the cookies 1 inch apart on ungreased cookie sheets. Sprinkle with sugar and use a fork to prick each cookie 3 or 4 times.
  • Bake at 375°F for 7 to 10 minutes or until slightly puffed with light golden edges. Let cool for 1 minute, then transfer from cookie sheets. Cool for 10 minutes until completely cooled.
  • Combine all filling ingredients in a small bowl and mix well until smooth, adjusting milk as needed for spreading consistency. Spread a scant 1 teaspoon of filling between two cooled cookies.
