Maple-Dijon dressed Brussels sprout salad with cranberries and cinnamon almonds - a show-stopping potluck hit!
Ingredients:
  • 2 pounds Brussels sprouts, trimmed
  • 0.25 cup maple syrup
  • 2 tablespoons extra-virgin olive oil
  • 4 teaspoons Dijon mustard
  • 4 teaspoons apple cider vinegar
  • 1 cup sweetened dried cranberries
  • 1 cup cinnamon-roasted almonds
Instructions:
  • Using a sharp paring knife, remove the cores from the Brussels sprouts. Gently separate the leaves and transfer them to a large bowl.
  • Combine maple syrup, olive oil, Dijon mustard, and apple cider vinegar in a small bowl. Drizzle the mixture over Brussels sprout leaves, add cranberries, and toss until coated. Finish by adding almonds and tossing again before serving.
