Decadent maple pudding with real maple syrup, perfect for dessert or layering in a pumpkin cake trifle.
Ingredients:
  • 2 tablespoons cornstarch
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 cup pure maple syrup
  • 2 cups half-and-half
  • 1 teaspoon maple extract
  • 1 teaspoon vanilla extract
Instructions:
  • Combine cornstarch, cinnamon, nutmeg, and salt in a saucepan and whisk together. Add egg yolks and maple syrup, whisk until smooth. Slowly pour in half-and-half while whisking continuously until well blended.
  • Continuously whisk mixture over low heat for about 10 minutes until thickened. Remove the pot from heat, then add and stir in butter, maple extract, and vanilla extract until butter is melted and well combined.
  • Strain the mixture through a fine mesh sieve into a bowl, pressing it through with a spatula.
  • Cover the pudding with plastic wrap, pressing it onto the surface to prevent a skin from forming. Chill in the refrigerator for a minimum of 4 hours.
