Slow cooker maple pumpkin spice pudding - a deliciously simple and irresistible treat!
Ingredients:
  • nonstick cooking spray
  • 1 (15 ounce) can pumpkin puree
  • 1 (12 fluid ounce) can evaporated milk
  • 0.5 cup baking mix (such as Bisquick ®)
  • 0.5 cup maple syrup
  • 2 eggs, beaten
  • 2 tablespoons butter, melted
  • 2.5 teaspoons pumpkin pie spice
  • 2 teaspoons vanilla extract
Instructions:
  • Spray the slow cooker bowl with nonstick cooking spray.
  • In a large bowl, mix together pumpkin, evaporated milk, sugar, baking mix, maple syrup, eggs, butter, and pumpkin pie spice until well combined. Then, transfer the mixture to the prepared slow cooker.
  • Cook covered on Low for 6 to 7 hours until an instant-read thermometer reaches 160 degrees F. Then, stir in vanilla extract before serving.
