Fall treat: Maple pumpkin doughnuts baked, glazed with maple, topped with pumpkin seeds.
Ingredients:
  • 1 teaspoon vegetable oil, or as needed
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 0.75 teaspoon ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.25 teaspoon ground nutmeg
  • 0.25 teaspoon ground allspice
  • 0.25 teaspoon salt
  • 0.125 teaspoon ground cloves
  • 0.25 cup light brown sugar
  • 0.75 cup pumpkin puree
  • 0.33333334326744 cup vegetable oil
  • 0.33333334326744 cup maple syrup
  • 0.25 cup buttermilk
  • 1 large egg
  • 0.5 cup confectioners' sugar
  • 3 tablespoons maple syrup
  • 0.25 cup finely chopped roasted pumpkin seeds
Instructions:
  • Preheat the oven to 375 degrees F (190 degrees C) and lightly grease a doughnut pan with 1 teaspoon of vegetable oil.
  • Combine flour, baking powder, cinnamon, ginger, nutmeg, allspice, salt, cloves, and brown sugar in a large bowl, mixing until well combined.
  • In a separate bowl, whisk together pumpkin puree, 1/3 cup vegetable oil, 1/3 cup maple syrup, buttermilk, and egg until smooth. Next, gently fold the pumpkin mixture into the flour mixture until just combined. Let the batter chill in the refrigerator for 20 to 40 minutes to blend the flavors.
  • Portion about 1/4 cup of batter into each doughnut well.
  • Bake in the preheated oven for 9 to 13 minutes until a toothpick inserted in the center of the doughnut comes out clean. Let the doughnut cool completely in the pan, then gently loosen the edges with a small offset spatula or knife and transfer to a wire rack.
  • Combine confectioners' sugar and 3 tablespoons of rich maple syrup in a small bowl, whisking until a silky glaze forms.
  • Dip doughnuts into glaze, covering the top completely and place on a wire rack for 2 to 3 minutes to set. Sprinkle with pumpkin seeds.
