Weekday-friendly sweet and flavorful lamb roast for any day of the week!
Ingredients:
  • 500g small sweet potatoes, scrubbed, quartered lengthways
  • 12 lamb cutlets, French-trimmed
  • 400g can brown lentils, rinsed, drained
  • 60ml (1/4 cup) maple syrup
  • 100g baby spinach
Instructions:
  • Preheat the oven to 200C/180C fan forced. Line a large shallow baking tray with baking paper. Arrange the sweet potatoes on the tray, coat them generously with olive oil spray, season with your favorite spices, and bake for about 20 minutes until they are tender.
  • Place the lamb and lentils on the tray, then generously spray with oil and drizzle with maple syrup. Bake for an additional 15-20 minutes until the sweet potato is golden and the lamb is cooked to your desired level of doneness.
  • Incorporate the spinach and plate up.
