Maple-Nut Biscotti

Maple-flavored Italian cookies with a sweet candy drizzle.
Ingredients:
  • 1/2 cup packed brown sugar
  • 1/4 cup granulated sugar
  • 1/2 cup butter or margarine, softened
  • 1 teaspoon maple flavor
  • 3 eggs
  • 3 cups Gold Medal™ all-purpose flour
  • 2 teaspoons baking powder
  • 3/4 cup chopped walnuts
  • 1 teaspoon vegetable oil
  • 4 oz vanilla-flavored candy coating (almond bark), melted
Instructions:
  • Preheat oven to 350°F and lightly grease a cookie sheet with shortening or cooking spray.
  • Combine sugars and butter in a large bowl and cream with an electric mixer until smooth and creamy. Add maple flavor and eggs, then mix in flour and baking powder. Gently fold in walnuts. Divide dough in half and shape each half into a 10-inch roll. Place rolls on a cookie sheet, making sure they are 5 inches apart, then flatten to a 3-inch width.
  • Bake for 20 to 30 minutes until golden brown around the edges. Transfer from baking sheet to a cooling rack and let cool for 10 minutes. Using a serrated knife, slice the rolls diagonally into 1/2-inch pieces. Place the slices cut-side down on an ungreased baking sheet.
  • Bake for 5 to 10 minutes until lightly browned and dry. Flip cookies and bake for an additional 5 to 8 minutes until golden brown and dry. Transfer to a cooling rack and let cool completely for about 15 minutes.
  • Blend the oil with the melted candy coating, then elegantly drizzle the mixture over the biscotti. Allow the coating to set until dry, then store your delicious treats in a tightly sealed container.
