Maple-roasted pecan brownies

Indulge in warm, fudgy brownies paired with cream or ice-cream for pure dessert bliss.
Ingredients:
  • 165.00 ml pecans
  • 27.00 gm maple syrup
  • 150g butter, chopped
  • 200g dark chocolate, roughly chopped
  • 270.00 gm firmly packed brown sugar
  • 3 eggs, lightly beaten
  • 4.40 gm vanilla extract
  • 250.00 ml plain flour
  • 32.50 gm cocoa powder
  • Double cream, to serve
Instructions:
  • - Preheat your oven to 180°C (160°C fan-forced) and line a baking tray with parchment paper. - Spread pecans on the tray and generously drizzle them with syrup. - Bake for 10 minutes, ensuring to stir halfway through, then allow them to cool before enjoying.
  • Place a sheet of baking paper in a 3cm-deep, 19cm x 29cm slice pan, ensuring the paper extends 2cm above the edge of the pan.
  • In a small saucepan, gently melt the butter and chocolate together. After 10 minutes, set it aside for another 10 minutes. Then, mix in sugar, eggs, and vanilla extract. Sift flour and cocoa over the mixture and stir until well combined.
  • Spread the brownie batter evenly in the pan. Sprinkle pecans on top and bake for 25 minutes, or until just firm.
  • Allow to cool before slicing into portions. Enjoy with a dollop of cream on the side.
