Succulent smoked duck breasts infused with sweet maple, thinly sliced and perfect for gourmet cracker appetizers.
Ingredients:
  • 2 boneless duck breast halves, skin on
  • 2 tablespoons kosher salt
  • 2 teaspoons cracked black pepper
  • 3 tablespoons maple syrup
  • 2 teaspoons maple syrup
  • maple wood chips
Instructions:
  • Season the duck breasts generously with salt and pepper. Transfer them to a shallow dish and drizzle 3 tablespoons of maple syrup over them, ensuring they are fully covered. Cover the dish, refrigerate, and let the duck breasts marinate for 12 to 24 hours.
  • Preheat electric smoker to 225 degrees F (110 degrees C) following manufacturer's directions, and use maple wood chips for flavor.
  • After marinating, gently rinse off the duck breasts and dry them thoroughly with paper towels. Score the duck skin with shallow cross-hatch marks using a sharp knife, being careful not to cut into the meat. Finally, brush each duck breast with a delicious 2 teaspoons of maple syrup.
  • Start by laying the duck breasts, skin-side up, on the grill rack in the smoker with a drip pan underneath. Smoke at 225 degrees F (110 degrees C) for 3 to 4 hours, replenishing maple wood chips as needed to maintain consistent smoke. The duck breasts are done when they reach an internal temperature of 160 degrees F (70 degrees C). Allow them to cool to room temperature before slicing. Remember to refrigerate until you're ready to serve.
