Fluffy classic cake - perfect for any occasion!
Ingredients:
  • 185g butter, softened
  • 4.40 gm vanilla extract
  • 215.00 gm caster sugar
  • 3 eggs, lightly beaten
  • 300.00 gm self-raising flour, sifted
  • 171.60 gm buttermilk
  • 20.00 gm cocoa powder, sifted
  • Pink food colouring
  • 125g butter, softened
  • 225.00 gm icing sugar mixture
Instructions:
  • Preheat your oven to 180°C/160°C fan-forced, then generously grease a 7cm-deep, 11cm x 21cm loaf pan.
  • With an electric mixer, whip together butter, vanilla, and sugar until the mixture is fluffy and light. Gradually add eggs one at a time, beating well after each addition. Fold in the flour and 1/2 cup of buttermilk. Divide the batter into 3 separate bowls. Create a chocolate mixture by adding cocoa and the rest of the buttermilk to one portion. Mix until well combined. Use food coloring to make another portion pink. Leave the final portion plain.
  • Spoon mixtures into pan, tap to settle, swirl for marble effect, smooth surface, bake for 1-1hr 10mins until skewer comes out clean (cover with foil if over-browning). Cool in pan for 10 mins then transfer to wire rack.
  • Using an electric mixer, whip butter in a bowl until fluffy. Slowly incorporate the icing sugar mixture while continuously beating until well combined. Add a tint of pink with food coloring for a lovely touch.
  • Dollop the icing generously over the loaf, then elegantly slice it before serving.
