Elevate your loaf with stunning chocolate marbling.
Ingredients:
  • 125g butter, chopped, at room temperature
  • 161.25 gm caster sugar
  • 300.00 gm self-raising flour, sifted
  • 169.95 gm milk, plus 1 tbsp milk, extra
  • Few drops pink food colouring
  • 20.00 gm cocoa powder, sifted
  • 0.83 gm bicarbonate of soda
  • 300.00 gm icing sugar
  • 10.00 gm cocoa powder
  • 15g butter
  • 1-40.00 gm water, hot
Instructions:
  • Preheat the oven to 180C and lightly grease a 13 x 23cm loaf pan before lining the base with baking paper.
  • Use an electric mixer to whip up a fluffy mixture of butter, sugar, and vanilla in a large bowl.
  • Add the eggs one by one, beating thoroughly after each addition and scraping the sides of the bowl.
  • Gently mix flour into the creamed mixture in batches, alternating with milk, and starting and finishing with flour. Divide the batter into 3 equal parts.
  • Prepare three portions: - Keep one plain. - Add a few drops of coloring to the second portion. - To the third portion, mix in cocoa, soda, and extra milk.
  • In the prepared pan, pour the remaining batter in alternating colors. Use a skewer or knife to swirl the colors, creating a beautiful marbled effect. Bake for 50-55 mins or until a toothpick comes out clean. Allow to cool in the pan for 5 mins, then transfer to a wire rack to cool completely.
  • Prepare the luscious chocolate icing by gently sifting icing sugar and cocoa together into a bowl. Combine with butter and water, then whip until silky and easily spreadable.
  • Smoothly cover the chilled cake with the mixture and store in a sealed container.
