Delicious margarita cake infused with tequila and triple sec, made with orange cake mix and lemon pudding, baked in a tube pan for a moist and citrusy treat.
Ingredients:
  • cooking spray
  • 1 (18.25 ounce) package orange cake mix (such as Duncan Hines® Orange Supreme)
  • 1 (3.4 ounce) package instant lemon pudding mix
  • 4 eggs
  • 0.33333334326744 cup vegetable oil
  • 0.66666668653488 cup bottled margarita mix
  • 0.25 cup lime juice
  • 0.25 cup tequila
  • 2 tablespoons triple sec
  • 1 lime, zested
  • 2.5 cups confectioners' sugar
  • 1 tablespoon tequila
  • 2 limes, juiced
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C). Prepare your 9-cup fluted tube pan by generously coating it with cooking spray that contains flour. Ensure every groove is coated by brushing with a pastry brush. Give it one more light coating of cooking spray, then flip the pan to remove any excess.
  • Combine the orange cake mix, lemon pudding mix, eggs, vegetable oil, margarita mix, lime juice, tequila, and triple sec in a mixing bowl until well mixed. Add grated lime zest, pour batter into the prepared fluted tube pan. Spread batter evenly in grooves, tap pan to remove air pockets.
  • Bake in the preheated oven for about 45 minutes or until a toothpick inserted into the center of the cake comes out clean.
  • Allow the cake to cool in the pan on a rack for 10 minutes. Gently loosen the sides by shaking the pan and slide a thin silicone or nylon spatula around the edges. Invert the pan onto a serving plate to release the cake. Let the cake finish cooling.
  • Create a delicate glaze by combining confectioners' sugar, 1 tablespoon tequila, 2 tablespoons triple sec, juice of 2 limes, and grated zest of 1 lime. Artfully pour the glaze over the cake, allow it to firm up for a few minutes, then slice and serve.
