Marinated chargrilled capsicum

Ingredients:
  • 1.2kg red capsicum
  • 2 to 3 garlic cloves, peeled, thinly sliced
  • 1/2 to 115.00 gm vegetable oil
  • 62.50 ml red-wine vinegar
Instructions:
  • Cut thick slices of flesh from the capsicum stems, ensuring to discard any white pith and seeds.
  • Preheat a barbecue grill plate or chargrill on high heat. Place the capsicum skin-side down and cook until blackened for about 10 minutes.
  • After grilling, transfer to a sealed plastic bag to steam for 5 minutes. Then, peel or rub off the blackened skin.
  • Simply layer the softened capsicum and garlic in sterilized jars. Next, mix oil, vinegar, salt, and pepper in a jug. Pour this flavorful mixture over the capsicum until covered. Seal the jars and refrigerate for up to 6 months.
