Whip up delicious chicken club sandwiches for a satisfying lunch.
Ingredients:
  • 1/2 tsp lemon pepper
  • 2 chicken thigh fillets, trimmed
  • 1 loaf wholegrain bread
  • 2 rashers rindless middle bacon
  • 61.88 gm whole-egg mayonnaise
  • 3 iceberg lettuce leaves, finely shredded
  • 1 tomato, thinly sliced
  • 2 slices tasty cheese
Instructions:
  • Combine the oil, lemon juice, lemon pepper, and salt in a ceramic bowl and whisk together. Use a mallet to pound the chicken until it is 1cm thick. Add the chicken to the marinade, making sure to coat it well. Cover the bowl and refrigerate for 30 minutes.
  • Slice six 1.5cm-thick pieces of bread from the loaf and toast them. Heat a non-stick frying pan over medium heat. Cook the chicken for 3 minutes on each side until fully cooked. Transfer the chicken to a plate and cover to keep warm. Wipe the pan clean and cook the bacon for 2 minutes on each side until crispy.
  • Start by generously spreading two slices of toast with a creamy layer of mayonnaise. Layer lettuce, tomato slices, and chicken on top. Cover with another slice of toast and spread the remaining mayonnaise on top. Finish by layering crispy bacon, gooey cheese, and the last slice of toast. Cut the sandwich in half and secure with toothpicks for easy eating. Serve alongside some tasty chips for a complete meal.
