Ingredients:
  • 250.00 ml kalamata olives
  • 150g feta, cut into 1.5cm cubes
  • 1 garlic clove
  • 30.00 ml fresh thyme leaves
  • 2 tsp chilli flakes
  • 113.75 gm extra virgin olive oil
  • 300g pasta spirals or penne rigate
  • 1 punnet cherry tomatoes, quartered
Instructions:
  • Combine olives and feta in a stylish bowl. Crush garlic with a knife, peel, and slice. Mix garlic, thyme, and chili with olives and feta. Drizzle with oil and toss gently. Chill for at least 1 hour, ideally up to 2 days.
  • Allow the dish to come to room temperature for 30 minutes before serving, it's okay if the oil has slightly solidified.
  • Boil pasta in generously salted water according to package directions until al dente (about 12 min). Drain and return to saucepan.
  • Remove garlic from olives and feta. Combine olives, feta, oil, salt, and pepper with pasta and tomatoes. Gently toss on low heat until warmed through. Serve and enjoy.
