Marinated feta & olives

Create a stunning platter with kalamata olives and marinated feta for effortless entertaining.
Ingredients:
  • 250ml (1 cup) extra virgin olive oil
  • 6 sprigs fresh thyme
  • 3 x 5cm-pieces lemon rind
  • 1 garlic clove, peeled, thinly sliced
  • 1 fresh red chilli, halved, deseeded
  • 2 tsp fennel seeds
  • 300g feta, cut into 2.5cm cubes
  • 360g jar kalamata olives, drained
  • Crusty bread, to serve
Instructions:
  • In a jug, mix together olive oil, fresh thyme, lemon zest, minced garlic, chopped chili, and fennel seeds.
  • Divide the feta and olives into separate bowls. Drizzle 60ml (1/4 cup) of the oil mixture over the olives, toss to combine. Do the same with the remaining oil mixture over the feta. Cover the bowls with plastic wrap and chill in the fridge for 6 hours to enhance the flavors.
  • Take the feta and olives out of the fridge 2 hours before serving to let them come to room temperature. Drain them and transfer to individual serving bowls. Enjoy with crusty bread.
