Marinated Greek feta

Ingredients:
  • 500g piece Greek feta, cut into 2cm pieces
  • 2 strips (about 2 x 8cm) lemon rind, white pith removed
  • 62.50 ml lightly packed fresh dill leaves
  • 20.00 ml fresh thyme leaves
  • 2 tsp brown mustard seeds
  • 1 tsp chilli flakes
  • 1 tsp cumin seeds
  • 1/2 tsp coarsely ground black pepper
  • 625mls (2 1/2 cups) olive oil or light olive oil
Instructions:
  • Rinse the feta gently under cold water to remove crumbs. Pat dry with paper towel and place in a sterilized 1-liter (4-cup) jar.
  • In a small saucepan over medium-low heat, combine lemon rind, dill, thyme, mustard seeds, chili flakes, cumin seeds, and pepper. Stir and cook for 1 minute until fragrant.
  • Drizzle in the oil and set heat to low. Warm for 3 minutes or until mixture is hot but not boiling. Gently pour the mixture over the feta, ensuring full coverage. Seal the jar promptly. Let it cool, then refrigerate for at least 1 day to enhance the flavors before use.
