Marinated lemon-tarragon cauliflower salad - prepare in advance for a unique and refreshing dish.
Ingredients:
  • 1 large lemon, zested and juiced
  • 2 tablespoons Dijon mustard
  • 1.5 tablespoons chopped fresh tarragon
  • 1 teaspoon honey
  • 0.5 cup olive oil
  • 1 medium head cauliflower, cut into bite-sized florets
  • 1 small Gala apple - peeled, cored, and diced
  • 0.33333334326744 cup cubed white Cheddar cheese
  • 0.25 cup diced cucumber
  • 0.25 cup diced celery
  • 2 tablespoons diced red onion
  • 6 leaves chopped fresh tarragon, or to taste
Instructions:
  • Combine the bright flavors of lemon zest and juice, Dijon mustard, fresh tarragon, honey, salt, and pepper in a small bowl. Drizzle in olive oil gradually while whisking until the marinade is perfectly blended; then, set it aside for later use.
  • 1. Boil water in a medium pot, then blanch cauliflower in batches for about 2 minutes until just tender. Drain and place in a large resealable plastic bag. Add marinade, seal tightly, and massage to coat all florets evenly. Refrigerate for at least 4 hours, preferably overnight for more flavor.
  • Take the cauliflower out of the bag and transfer it to a large bowl. Mix in apple, Cheddar cheese, cucumber, celery, and red onion, tossing gently to combine. Top with tarragon leaves and serve.
