Marinated tofu & cashew stir-fry

15-minute marinated tofu and peanut stir fry - a delicious and satisfying meal for everyone, meat-lovers included!
Ingredients:
  • 125g cashew
  • 36.40 gm peanut oil
  • 2 x 200g pkts marinated tofu, cut into 2 cm strips
  • 1 onion, cut into wedges
  • 1 bunch baby choy sum, leaves separated, trimmed, washed and cut into 5 cm lengths
  • 150g oyster mushrooms
  • 125ml oyster sauce
  • 125ml water
  • Steamed jasmine rice, to serve
Instructions:
  • Heat the wok over high heat until sizzling, then add raw cashews. Stir and cook until they turn a beautiful golden hue. Transfer the toasted cashews to a plate and keep aside.
  • In a hot wok, sizzle tofu strips in 1 tablespoon of oil until they are lightly crisp. Set aside once done.
  • In the wok, heat the remaining oil and cook the onion until transparent. Add baby choy sum and oyster mushrooms, cook until tender. Reintroduce tofu and cashews into the wok. Mix oyster sauce with water and pour into the wok, stirring everything together.
  • Pair the flavorful stir-fry with fluffy steamed rice.
