Vibrant veggie and smoked turkey sandwiches, perfect for a crowd's delight!
Ingredients:
  • 1/3 cup tarragon vinegar
  • 1/4 cup vegetable oil
  • 2 tablespoons chopped fresh oregano leaves or 2 teaspoons dried oregano leaves
  • 1/2 teaspoon ground mustard
  • 1/2 teaspoon pepper
  • 2 garlic cloves, finely chopped
  • 1 medium cucumber, sliced
  • 1 medium red onion, sliced and separated into rings
  • 1 medium green bell pepper, cut into rings
  • 1 medium red bell pepper, cut into rings
  • 1 medium yellow bell pepper, cut into rings
  • 6 roma (plum) tomatoes, sliced
  • Lettuce leaf
  • 24 thin slices smoked turkey or ham (1 1/2 pounds)
  • 24 sandwich buns
Instructions:
  • Combine vinegar, oil, oregano, mustard, pepper, and garlic in a small bowl and mix well.
  • Combine cucumber, onion, bell peppers, and tomatoes in a sturdy resealable bag. Pour the vinegar mixture over the vegetables, seal the bag, and shake well to coat. Chill in the refrigerator for a minimum of 4 hours to allow the flavors to meld.
  • Place a bed of fresh lettuce on a serving platter. Drain the vegetables and arrange them along with the turkey slices on top of the lettuce. Serve alongside buns.
