Elevate your tea cake with the sweet and flavorful touch of marmalade.
Ingredients:
  • 375g packet mixed dried fruit
  • 250.00 ml strong black tea, cooled
  • 90.00 gm firmly-packed brown sugar
  • 262.50 gm self-raising flour, sifted
  • 57.50 gm walnuts, finely chopped
  • 52.80 gm orange marmalade
Instructions:
  • In a large bowl, mix together dried fruit, tea, and sugar. Stir well to combine and cover the bowl. Let it soak overnight at room temperature.
  • Preheat your oven to 180C. Line a 7cm-deep, 10.5cm x 20.5cm loaf pan with baking paper, leaving a 2cm overhang on both long ends.
  • Combine the egg, flour, walnuts, and marmalade with the fruit mixture using a metal spoon until just mixed. Transfer the mixture to the prepared pan and bake for 55 to 60 minutes or until a skewer inserted into the center comes out clean. Allow the loaf to cool in the pan for 10 minutes, then transfer it to a wire rack to cool completely. Slice and serve.
