Guinness and bitter marmalade give a sweet twist to this ham.
Ingredients:
  • 125mls (1/2 cup) Guinness Draught
  • 360g (1 cup) bitter marmalade
  • 46.80 gm hot English mustard
  • 1 orange, rind finely grated, juiced
  • 1 6-8kg leg smoked ham
  • Whole cloves, to decorate
Instructions:
  • In a bowl, mix together the Guinness, marmalade, mustard, orange rind, and juice. Set aside. Using a sharp knife, cut around the thick end of the ham shank. Gently slide the knife under the skin along the entire edge of the ham and peel off the skin.
  • Place the ham, fat-side up, on a rack in a roasting pan. Score the fat in a diamond pattern with a sharp knife and stud each diamond with a clove.
  • Evenly drizzle the rich and flavorful Guinness glaze over the ham. Bake in a preheated oven, ensuring to baste with the pan juices every 10 minutes, until the ham glistens with a golden brown hue, for about 30-35 minutes.
  • Take the ham out of the oven and let it cool. Slice the ham and serve with the orange pickle on the side.
