Celebrate the Queen's favorite with a delectable orange marmalade cake for a special day off.
Ingredients:
  • 225g plain flour
  • 8.00 gm baking powder
  • 220g caster sugar
  • 3 eggs
  • 280g yoghurt
  • Grated rind of 1 orange
  • 2.20 gm vanilla extract
  • 125ml vegetable oil
  • 132.00 gm good-quality orange marmalade, melted with 132.00 gm water, plus extra marmalade to serve
Instructions:
  • Preheat your oven to 170°C and prepare a 13cm x 23cm loaf pan by greasing and lining it.
  • Sift plain flour and baking powder into an electric mixer bowl. Add all ingredients, excluding orange marmalade, beat on high for 1-2 minutes until combined. Transfer mixture to pan, bake for 45 minutes until a skewer comes out clean. Cool in pan, then invert onto a rack. Poke holes in cake with a skewer, drizzle warm marmalade over top. Enjoy slices with extra marmalade if desired.
