Grilled skirt steak marinated in Marsala wine - a delicious must-try from Chef John.
Ingredients:
  • 0.66666668653488 cup Marsala wine
  • 0.25 cup ketchup
  • 6 cloves garlic, minced
  • 2 teaspoons kosher salt
  • 1 teaspoon dried rosemary
  • 1 teaspoon ground black pepper
  • 1 (1 1/2-pound) skirt steak, cut in half across the grain
Instructions:
  • In a large glass or ceramic bowl, combine Marsala wine, ketchup, garlic, kosher salt, rosemary, and black pepper. Add skirt steak and mix well to coat evenly. Cover the bowl with plastic wrap and refrigerate for 8 hours to overnight for marinating.
  • Heat up the outdoor grill on high and lightly oil the grate.
  • Remove the steak from the marinade, allowing any excess to drip off, then discard the marinade.
  • Grill the steak until it glistens, around 3 to 4 minutes on each side. Use an instant-read thermometer to ensure the center reaches 130 degrees F (54 degrees C). Rest the meat on a plate for at least 5 minutes before slicing thinly against the grain.
