Homemade vanilla marshmallows coated in colorful coconut make a delightful treat with this easy recipe. Customize for parties or gifts.
Ingredients:
  • 322.50 gm caster sugar
  • 24.00 gm gelatine
  • 170.00 gm desiccated coconut
  • Red, yellow, green and blue food colouring
Instructions:
  • Prepare the pan by greasing a 3cm-deep, 16.5cm x 26cm (base) slab pan and lining the base and sides with baking paper, leaving a 2cm overhang at both long ends. In a saucepan over medium heat, combine sugar and 2/3 cup of hot water. Stir and cook for 3 minutes until the sugar dissolves and the syrup turns clear.
  • Combine gelatine and 2/3 cup of cold water in a jug using a fork. Pour the mixture into the hot syrup and cook while stirring for 2 to 3 minutes until the gelatine dissolves and the mixture is clear. Transfer the mixture to a bowl of an electric mixer and let it cool to room temperature for about 30 minutes.
  • With an electric mixer, whip the sugar and gelatin mixture on high speed for 6 to 10 minutes until it becomes very thick. Incorporate the vanilla and continue to beat for 1 minute. Pour the mixture into the prepared pan, smooth the top, and let it sit at room temperature for 1 hour until it sets. Transfer the marshmallow onto a board, then cut it into 24 squares using a wet knife.
  • In each snap-lock bag, combine 1/2 cup of coconut with 8 to 10 drops of food coloring. Seal the bags and massage the color into the coconut. Add 1 marshmallow at a time to each bag and toss gently to coat with coconut. Transfer the coated marshmallows to a wire rack. Repeat for each desired color. Let the marshmallows sit until the surfaces are dry to the touch, about 1 hour. Serve and enjoy!
