Easy marshmallow cake with gooey marshmallows, only 4 ingredients, ready in 40 minutes.
Ingredients:
  • 150g butter, chopped
  • 165g (2 3/4 cups) mini marshmallows
  • 225g (1 1/2 cups) self-raising flour
  • 3 eggs, lightly whisked
Instructions:
  • Preheat the oven to 180C/160C fan-forced. Lightly grease a 20cm square cake pan and line the base with baking paper extending over two sides.
  • In a large saucepan, melt the butter over medium-low heat until the base is covered. Add 105g (3/4 cup) marshmallows and heat until both are melted and softened. Stir with a wire whisk until well combined. Allow to cool slightly before using.
  • Combine flour and eggs in the pan, gently folding with a spatula until evenly mixed. Transfer the batter to the prepared pan and bake for 23 minutes, or until it springs back to a gentle touch.
  • Take the cake out of the oven and generously sprinkle with the remaining marshmallows. Place it back in the oven for 2 minutes, or until the marshmallows are just soft. Let it cool completely in the pan.
  • Gently lift the cake from the pan using the paper, then cut into squares for serving (refer to note for variations).
