Impress with festive marshmallow star treats for Christmas.
Ingredients:
  • 1/2 cup powdered sugar
  • 2 tablespoons cornstarch
  • 7 1/2 teaspoons unflavored gelatin
  • 1/2 cup cold water
  • 1 1/2 cups granulated sugar
  • 1 cup light corn syrup
  • 1/4 teaspoon salt
  • 1/2 cup water
  • 1 teaspoon vanilla
Instructions:
  • Prepare the 9-inch square pan by spraying it with cooking spray and lining it with parchment paper, ensuring that the paper hangs over two opposite sides. Combine powdered sugar and cornstarch in a small bowl, then sprinkle 3 tablespoons of the mixture over the parchment paper in the pan. Soften gelatin by sprinkling it over 1/2 cup of cold water in the bowl of a stand mixer, and set it aside.
  • In a 2-quart saucepan, combine granulated sugar, corn syrup, salt, and 1/2 cup water. Heat over medium heat, stirring constantly until the sugar dissolves. Bring to a boil and cook for about 15 minutes until it reaches 240°F on a candy thermometer or forms a pliable ball when dropped into cold water. Remove from heat.
  • Gradually drizzle syrup into softened gelatin while mixing on low speed. Increase speed to high and beat for 6 to 8 minutes until mixture is light and has nearly tripled in volume. Mix in vanilla and beat on high speed for 1 minute. Pour into pan, use a rubber spatula to spread and smooth the top. Sprinkle the top of the marshmallows with 3 tablespoons of powdered sugar mixture. Leave uncovered for at least 8 hours or overnight to set.
  • Carefully release the marshmallow mixture from the pan and transfer it as one piece onto a cutting board. Coat a 2- to 3-inch star-shaped cutter with cooking spray and cut out marshmallow stars. Dust each star with the remaining powdered sugar mix and store in an airtight container at room temperature for up to 3 weeks.
