Marshmallow Topped Lucky Cupcakes

Colorful cupcakes with marshmallow topping, great for sharing with loved ones!
Ingredients:
  • 1 box Betty Crocker™ Super Moist™ Yellow Cake Mix (or your favorite flavor)
  • Water, vegetable oil and eggs called for on cake mix box
  • 1/2 cup green candy sprinkles
  • 1 tub (16 oz) Betty Crocker™ Rich & Creamy Vanilla Frosting
  • 1 cup marshmallows from Lucky Charms™ cereal
Instructions:
  • Preheat oven to 350°F (325°F for dark or nonstick pan) and line 24 regular-size muffin cups with paper baking cups.
  • In a spacious bowl, use an electric mixer to blend cake mix, water, oil, and eggs for 30 seconds on low speed, then 2 minutes on medium speed, ensuring to scrape the sides occasionally. Carefully fold in sprinkles. Equally distribute batter into muffin cups, filling each about two-thirds full.
  • Follow the baking instructions provided on the box for cupcakes until a toothpick inserted in the center comes out clean. Let them cool in the pan for 10 minutes, then transfer to a cooling rack to cool completely, approximately 30 minutes.
  • Spread a generous layer of frosting on the cupcakes. Sprinkle marshmallows on top and gently press them into the frosting. Store the cupcakes loosely covered.
