Elevate your meal with a luxurious appetizer of fresh crabmeat.
Ingredients:
  • 1 tablespoon olive oil
  • 1/2 cup green onions, finely chopped (8 medium)
  • 1/2 cup finely chopped red bell pepper
  • 1/2 cup Progresso™ Italian style bread crumbs
  • 1 egg, slightly beaten
  • 1/2 cup mayonnaise
  • 1 tablespoon fresh lemon juice
  • 1 1/2 teaspoons seafood seasoning (from 6-oz container)
  • 1/2 teaspoon pepper
  • Dash Worcestershire sauce
  • 2 lb cooked fresh crabmeat
  • Sliced green onions, if desired
  • Lemon wedges, if desired
Instructions:
  • Heat oil in a large nonstick skillet over medium heat. Sauté green onions and bell pepper for 8 minutes until tender, stirring occasionally. In a large bowl, combine onion mixture with bread crumbs, egg, mayonnaise, lemon juice, seafood seasoning, pepper, Worcestershire sauce, and gently fold in crabmeat.
  • Prepare a cookie sheet by lining it with foil. Mold the crab mixture into 14 cakes, each measuring 2 1/2 inches using a 1/3-cup measuring cup. Arrange the cakes on the cookie sheet. Cover the cakes and refrigerate for at least 1 hour, but no more than 8 hours.
  • In a large nonstick skillet, melt butter over medium heat. Cook the crab cakes in batches for 8 to 10 minutes in the butter until they turn golden brown, flipping once. Place them on paper towels to drain. Top with sliced green onions and serve with lemon wedges.
