Mascarpone Brulee with Fresh Berries

Mascarpone brulee and fresh berries on shortcake halves make the perfect early summer dessert.
Ingredients:
  • 1 pint whole strawberries, stems removed
  • 0.5 pint fresh blackberries
  • 0.33333334326744 cup white sugar
  • 0.5 orange, juiced
  • 1 (8 ounce) container mascarpone cheese
  • 1 teaspoon lemon zest
  • 0.5 teaspoon white sugar
  • 3 drops vanilla extract, or to taste
  • 2 shortcakes, halved horizontally
  • 4 teaspoons white sugar, or as needed
Instructions:
  • Combine fresh strawberries, juicy blackberries, a hint of sweetness with 1/3 cup of sugar, and a splash of vibrant orange juice in a bowl. Seal the bowl with plastic wrap and chill in the refrigerator for at least 2 hours, or up to overnight to enhance the flavors.
  • Combine mascarpone cheese, lemon zest, a hint of sugar, and a touch of vanilla extract in a bowl, gently stirring until smooth.
  • Evenly layer mascarpone mixture on each shortcake half. Sprinkle 1 teaspoon of sugar over each one. Use a kitchen torch to caramelize the sugar for 20 to 30 seconds per shortcake. Serve each shortcake in a shallow bowl, surrounded by berries and their juices.
