Ingredients:
  • 4 pounds Yukon Gold potatoes, peeled and cut into 1-inch pieces
  • 0.5 cup chicken broth, or more as needed
  • 4 cloves garlic, peeled
  • 1 (8 ounce) container sour cream
  • 0.5 cup half-and-half
  • 1 stick butter
Instructions:
  • Place potatoes in a cozy slow cooker hug with flavorful chicken broth and aromatic garlic.
  • Slow cook until potatoes are soft enough to easily pierce with a fork, either for 10 hours on Low or 4 1/2 hours on High. Add more chicken broth if needed to prevent the potatoes from drying out.
  • Combine sour cream, half-and-half, and butter in the slow cooker. Use beaters for extra creamy potatoes, mixing until smooth and fully incorporated. Season with salt and pepper to taste.
  • Serve immediately or cover and keep warm until ready to serve with the rest of the meal.
