Vibrant green dish bursting with flavor from spinach, garlic, and vegetable stock!
Ingredients:
  • 8 red potatoes, peeled and cubed
  • 1 tablespoon olive oil
  • 1 (14 ounce) can vegetable broth
  • 0.75 (10 ounce) bag washed fresh spinach
  • 0.5 cup grated Parmesan cheese
  • salt and pepper to taste
Instructions:
  • In a large pot, boil potatoes in salted water until tender. Drain and steam briefly. In a blender, puree garlic, olive oil, vegetable broth, and spinach until smooth. Set aside.
  • Mash the cooked potatoes until smooth, then gently mix in Parmesan cheese and season with salt and pepper to taste.
