Spinach-Infused Mashed Potatoes

Elevate mashed potatoes with nutritious spinach!
Ingredients:
  • 4 potatoes, peeled and cubed
  • 1 tablespoon extra-virgin olive oil
  • 0.5 cup diced red bell pepper
  • 0.5 cup diced yellow bell pepper
  • 0.25 cup all-purpose flour
  • 2 cups chicken broth
  • ground black pepper to taste
  • 3 ounces baby spinach leaves
  • 0.5 cup grated Parmesan cheese
  • 2 tablespoons bacon bits
  • 1 tablespoon minced garlic
  • 2 tablespoons butter
  • 0.5 cup cream
  • salt and pepper to taste
Instructions:
  • In a large pot, simmer potatoes in salted water until tender, about 20 minutes. Drain and let steam dry for a minute.
  • Heat olive oil in a saucepan over medium heat. Add red and yellow bell pepper and cook until soft, about 3 minutes. Stir in the flour and cook for 3 more minutes. Pour in the chicken broth and bring to a boil. Reduce heat to medium-low and simmer for 15 minutes. Season with black pepper to taste.
  • After draining the potatoes, add them back to the pot with baby spinach, Parmesan cheese, bacon bits, and garlic, then mash until smooth. Mix in butter and cream until combined, season with salt and pepper, and serve with bell pepper gravy.
